Spinach, Feta and Roasted Red Pepper Crepes

A few months ago a friend had me over for dinner and made dessert crepes for us. She made the crepes from scratch and said how simple it was.  She was right.  If you can make pancakes, you can make crepes.

I have tried a couple different fillings, but tonight we had the best yet. 
Start with this basic crepe recipe. It should make about 8 crepes.

For the filling:
Crumbled Feta Cheese
Spinach: I bought baby spinach.  Blanched it in boiling water for 30 seconds, drained it and the squeezed out the excess water.  Then I chopped it up a bit.
Roasted Red Pepper: You can buy these in a jar, but I bought a red pepper and roasted it (preheat to 450°F. Place the pepper on a cookie sheet and roast in the oven, turning every 15 minutes until done (about 30 minutes).

Note: I typically don't like cooked peppers, but by roasting the pepper, it gave the crepe the right amount of sweetness.  

 Layer the filling on the crepe and enjoy!

If you love Nutella like we do, make an extra batch of crepes and have some Nutella crepes for dessert.
